Washed process: the most mature fruits are harvested and at their optimal point of flavor. All the layers of the grain are removed in a pulper, then it is washed and the best quality ones are chosen. They are fermented and then dried. Due to this process, Colombian coffees are known for having soft fruity flavors, acidic, medium body with slight sweetness.
honey description:
Honey process: the ripest fruits are harvested and at their optimal flavor point. The shell is removed and the mucilage is left, that is, the sticky layer that covers the grain. It is then dried in the sun with shade depending on the amount of mucilage left. Lasts 6 to 8 days. Generally you get a sweeter coffee, notes of honey, yellow fruits. Very rich and balanced coffee.
